Margherita Pizza

Hello Friends, tonight I am sharing another recipe with you. It must have been this time last year our family tried to go vegetarian. We truly didn't last long, maybe a week. The biggest problem was I didn't know enough vegetarian recipe's to make dinners different each night. It was such a challenge, I probably should have planned things out a lot better. I did make a plan with myself to continue trying vegetarian recipe's. My hope is too encourage my kids to consider eating less meat in their diets. Maybe if I keep making meals like these one's they'll realized that vegetarian meals can be really good. My wish for them is to expand their pallets into trying a variety of foods and stay away from too many animal meats. Below is the recipe for this amazing  Margherita Pizza, Enjoy~

Ingredient's:

  • 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon sea salt
  • 4 Roma tomatoes, chopped
  • 8 ounces shredded Mozzarella cheese
  • 4 ounces shredded Fontina cheese
  • 10 fresh basil leaves, washed, dried
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup crumbled feta cheese

  • Stir together olive oil, garlic, and sea salt; toss with tomatoes, and let marinate for 15 minutes, but no more than 20 minutes.
    Preheat oven to 400.

Brush each pizza crust with some of the tomato marinade.

    1. Sprinkle the pizzas evenly with Mozzarella and Fontina cheeses.
    2. Place tomatoes on top of cheese, then sprinkle with shredded basil, Parmesan, and feta cheese.
    3. Place baking stone in 6 min before and then remove and place pizza on stone and into the oven

So, I used Pillsbury pizza dough for my pizza. I would love to master my own pizza dough but I don't have the proper tools for that. I would really love a big mixer, I think I would do a lot more of my own baking if I had one.
Anyways, I baked my pizza dough for 8 minutes first. Then I added my toppings...I did put the tomatoe marinade on the dough before I baked it.
Once I cooked the pizza dough for 8 mins I took it out and added the toppings and then put it back in the over for another 8 mins (roughly)...I just kept an eye on it until the cheese melted and had a nice brown look.

Overall this pizza was a hit in my house! If I had to change anything I would have used more garlic. So next time I will remember that. I hope you try this beauty, I promise you'll love it~ Well chummies, unitl tomorrow good night and god bless~
