Fresh Basil & Mozzarella Grilled Sandwich.

We decided to try a new sandwich recipe. Typically when we have lunch we always tend to go for lunch meats, egg salad, tuna..you know the usual sandwich things. I wanted to make something for the family that is a more vegetarian...a different kind of offer. So I found this Basil & Mozzarella grilled sandwich.
Boy did we hit it big with this one...it is sooooo good!!!
First off you have to make your own pesto sauce, its so easy..I included that recipe below.
 
                                 ~Basil Leaves~
Ingredients
  • ⅓ cup extra virgin olive oil
  • 1½ cups fresh basil leaves
  • ½ cup fresh spinach leaves
  • 1 clove garlic
  • ⅓ cup grated Parmesan cheese
  • ⅛ tsp salt
  • ⅛ tsp pepper
Fresh Spinach..

Instructions
  1. Place all ingredients in a food processor (or blender) and pulse until desired consistency.
  2. Best if used within two days.
  3. Can be frozen in an airtight container for up to 3 months
Above is some grated mozzarella cheese needed to keep the tomaote in place while you grill..
I used Roma tomatoes for this recipe...
Ingredients
  • 8 slices of 100% whole wheat bread
  • 1 recipe of basil spinach pesto (see link in post)
  • 1 large tomato, thinly sliced
  • 1 cup shredded Mozzarella cheese


Instructions
  1. Spread ½ to 1 tablespoon of pesto on each slice of bread.
  2. Sprinkle 2 tablespoons of Mozzarella cheese on four slices of bread, then top with 2-3 slices of sliced tomatoes.
  3. Sprinkle 2 more tablespoons of cheese on top of the tomatoes.
  4. Cover with remaining four slices of bread.

5. Grill sandwiches on a frying pan or a griddle over medium heat until bread is browned and cheese is melted.

 
I served this sandwich with some pasta. Its an easy sandwich to make, a little time consuming..I suppose you could buy your own pesto but it did taste really good with fresh pesto. I would definitely recommend this recipe to you...and you could even serve it with a good soup. I did have some pesto left over, so I froze it and i'll use it next week with some pasta.
