Parmesan-Herb Roasted Potatoes and Secrets shared amongst Strangers~


Monday evening I tried a new potatoe recipe. Parmesan-Herb Roasted Potatoes and I made some crusted coated chicken with green beans. I'm always searching for some new potatoe recipe, usually my seasonings are easy ones. I wanted to try something with some fresh herbs, and I found this recipe. It was delicious, the whole family liked it. Below are the ingredients, followed are the directions.
 

Ingredients
  • 2 1/2 lbs baby red potatoes, sliced into halves (or quarters if slightly bigger)
  • 3 1/2 Tbsp olive oil, divided
  • 3/4 cup shredded parmesan cheese (2.5 oz)
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 Tbsp chopped fresh rosemary
  • 3/4 tsp salt, or to taste
  • 1/2 tsp freshly ground black pepper

Directions
 
  • Preheat oven to 400 degrees. Drizzle 1 Tbsp olive oil over a baking sheet and spread evenly to coat (I just used a small sandwich bag to spread), set aside.
  • In a large mixing bowl toss potatoes with remaining 2 1/2 Tbsp olive oil. Add parmesan, garlic, parsley, rosemary and sprinkle with salt and pepper, then toss to evenly distribute. Pour mixture onto prepared baking sheet and spread into an even layer (add parmesan that has fallen off potatoes back on tops of potatoes). Bake in preheated oven 25 minutes, then remove from oven and toss (they may stick slightly so just use a spatula to lift from pan and rotate), return to oven and bake until golden and crisp on outsides, about 20 minutes longer. Serve immediately.

    On a bit of a side note, last week I had to meet with a new woman for work. We met in Guelph, and we chatted for 2.5 hours. I have to be careful with what I say here, as much as I would love to share. What I will say..is in all these years I have not met anyone as close to my situation as this lady. It was surreal to have the chance to talk with someone who shares the same feelings and pain that I do. She too had a son injured in a car accident. Spinal Cord Injury with similar tragedy behind the whole ordeal. She is 11 years post accident, I am 20 years. She too suffers from Post-traumatic Stress Disorder but has not had any professional help with that. Unfortunately that leaves her stuck in a place that I am happy to be out of.
    I did encourage her to get some help, I explained how some of her feelings and thoughts are from her PTSD. She was receptive to that and I do believe she will follow through. We have so much in common, things related to our situations. Our son's couldn't be more different, lol and for that reason they must meet.
    Have you ever met someone for the first time, someone who you know has lived through the exact same thing as you...and in that one moment, when you say the one thing you can never say to anyone else. You lock eyes, with those words spoken...you both know neither of us will respond, its something that I have never said. Something told me...that neither had she!
