Mondays Menu...



Good Evening Readers...

Today's dish was amazing! I actually did two recipes because I didn't do a main dish. Instead I made a new dessert and a new salad. I have secretly decided to incorporate more salads into our meals, I must admit we as a family have 2 terrible habits that we need to break. Number one being...we as a family collectively drink way to much soda. It's terrible the amount of coke, orange crush and root beer that we drink. I find its worse in the summer time, probably due to being outside alot around the pool. We could technically make better choices, although really I do drink alot of water...its the rest of them that don't! The second terrible bad habit is the lack of fresh vegetables in our meals at dinner time. Well, I do have raw veggies usually available at dinner complete with dip and the family does enjoy that, it kinda gets old after awhile. So, that is why we are trying more salads...more variety is always better.
Dinner tonight was steak, potatoe skins (filled with mashed potatoes and seasonings) and this new salad " Festive Strawberry Nut Salad" and its fantastic!!
This has to be seriously the easiest salad ever...

FESTIVE STRAWBERRY NUT SALAD

1/2 cup of sliced almonds
3 tbsp of sugar
2 cups of packed torn spinach leaves
2 cups of torn boston salad
2 cups halved strawberries
1/3 cup of Kraft Signature Creamy Poppyseed Dressing

TOSS:


Almonds with sugar in nonstick frying pan; cook on medium heat 6 to 8 min. or until sugar forms a golden brown syrup and evenly coats the almonds, stirring constantly. SPread into single layer on greased baking sheet or sheet of wax paper; cool. Break into small pieces.

TOSS:

Spinach leaves, Boston lettuce and halved strawberries in large bowl.
Drizzle with Kraft Creamy Poppyseed dressing just before serving: mix lightly. Sprinkle with almonds. Serve on chilled plates.

The second new recipe was equally as simple as the salad. I decided to go with a strawberry theme tonight since I had a whole carton of them in the fridge, figured I should use them up.

jell-o fruity strawberry pie: "What you need
1-1/4 cups Honey Maid Graham Crumbs
1/4 cup non-hydrogenated margarine, melted
2/3 cup boiling water
1 pkg. (85 g) Jell-O Strawberry Jelly Powder
Ice cubes
1/2 cup cold water
1-1/2 cups thawed Cool Whip Light Whipped Topping
1 cup chopped strawberries
1 cup sliced fresh strawberries
Make It!
MIX crumbs and margarine; press firmly onto bottom and up side of 9-inch pie plate.
STIR boiling water into dry jelly powder in large bowl at least 2 min.
until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to jelly; stir until slightly thickened. Remove any unmelted ice.
ADD whipped topping; stir with wire whisk until well blended. Stir in chopped strawberries.
Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.
REFRIGERATE 6 hours or overnight until firm. Top with sliced strawberries. Store in refrigerator."\

This is it..isn't it beautiful? My family is know calling me Betty Crocker and have alot of laughs about Monday's Menu..I will say one thing for sure, they aren't laughing when they are munching down on Mondays Menu!
