Mondays Menu..
Well as promised tonight I did make a new meal for the family and it went over wonderfully! I even impressed Braden who happens to be my picky eater.
I made an amazing salad and Chicken Quesadilla's. The salad is really the newest feature, the quesadilla's was really nothing special, but none the less really good!
The salad was called Berry-Pine Nut Chicken Salad with fresh blueberries.
RECIPE:
Dressing:
3 tbsp of Red Wine Vinegar
2 tbsp of seedless raspberry jam
1 tsp Dojon Mustard
1/4 cup of olive oil
1/8 tsp of salt
1/8 tsp pf coarsely ground black pepper
SALAD
1/4 cup of pine nuts
1 bag of boston lettuce. or about 5 cups
1 cup of blueberries
1 lb cooked chicken breasts
1/4 small red onion
8 oz sugar peas or 2 cups
1. For Dressing, combine vinegar, jam and mustard; mix well. Add oil, salt and black pepper. Mix again and set aside.
2. For Salad, place pine nuts into saute pan; toast over medium heat 4-6min, remove from heat
3. Wash lettuce and berries. Thinly slice chicken and onion, cut sugar snap peas in half
4. Mix all together,in a large serving bowl, top with toasted pine nuts,
Dinner is served....
Today was a lovely day, the weather was great. I sat outside and read my book, the guys were here today to start out basement flooring. Hopefully Kailey will be moved into her bedroom this weekend!
